In a mixing bowl, combine 1 and 1/4 cups of flour, 1/2 cup of brown sugar, and 1 teaspoon of cinnamon. Mix the dry ingredients together.
Put a small saucepan over medium heat. Add 1 stick of butter and let it melt for 4 to 5 minutes until golden brown. Stir continuously. Make sure to not burn the butter.
Add a tablespoon of vanilla extract and the browned butter to the dry mixture. Mix until well combined using a spatula. You can now easily form the mixture. Let it cool for a couple of minutes. Clump the mixture together and then break it apart into chunks. Cover the bowl with a cling wrap and place it in the fridge for about 30 to 45 minutes.
Peel the apples, then cut them into small pieces. Place them in a small saucepan. Next, add 1 teaspoon of ground cinnamon, vanilla extract, 1/4 cup of brown sugar, juice of 1 lemon, and 1 and 1/2 tablespoons of butter. Mix them and cook on the stove for about 5 minutes over medium heat with the lid on top.
Add 1 and 1/2 tablespoons of flour and mix them well to coat the apples. Once the sauce thickens, turn off the heat.
Transfer the apples to a pie plate in one nice layer. Sprinkle the crumbles on top of the apples, then place in the oven at 400 degrees F for about 25 to 30 minutes or until nice and golden brown. Once done, let it cool a little bit before serving.
