Fill the pot with 8 to 9 cups of water and add the 2 cups of dried kidney beans, soak for 2.5 hours. Place it over medium heat, then bring the beans to a boil. Add the garlic cloves, thyme, and chopped onions. Season with salt and black pepper. Once boiling, let it simmer for about an hour, turn the heat to low, and give it a stir.
