Ingredients:

  • 6 large eggs
  • ½ tsp of baking soda
  • 40 ounces of vegetable or canola oil
  • ½ cup of all-purpose flour
  • ¼ tsp of salt, divided
  • ¼ tsp of garlic powder, divided
  • ¼ tsp of paprika, divided
  • 1/8 tsp of black pepper
  • 2 medium eggs
  • 1 cup of panko crumbs
  • ¼ cup of mayonnaise
  • 2 tsp of mustard or dijon mustard

Directions:

Step 1

In a medium-sized saucepan, place the eggs, then add water until covered and an inch above the eggs, and sprinkle baking soda. Place the saucepan on a stove, then bring it to a rapid boil, turn off the heat, place the lid on the saucepan, and let it sit for about 11 minutes. Remove the eggs immediately, then transfer them to an ice water bath to cool completely and stop the cooking process, and then peel the shells off of each egg. Cut the eggs in half lengthwise, then remove and transfer the yolks to a small bowl, and place the egg whites on a plate. Set up 3 mixing bowls, in the 1st bowl, mix together the flour, salt, garlic powder, and paprika, then in the 2nd bowl, whisk 2 eggs together, and in the 3rd bowl, add the panko crumbs.

Step 2

Place the egg white one at a time in the flour mixture coating it lightly, then dip in the egg mixture and coat it with panko crumbs. Place each coated egg on a plate, then place a pot over medium-high heat, and heat up the oil to about 350 degrees. Carefully place the eggs into the hot oil, then cook them for about 2 to 3 minutes or until light brown and crispy, and transfer the eggs to a plate lined with a paper towel to drain off excess oil. In a mixing bowl, mash the egg yolks, then add the mayonnaise, mustard, salt, garlic powder, and paprika, and mix them all together to combine. Scoop with a spoon or transfer the yolk mixture to a piping bag, then fill each center of fried egg white with the yolk mixture, and garnish with more paprika. Serve and enjoy!
