In a small mixing bowl, combine 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of tomato ketchup or tomato sauce, 1 teaspoon of sugar, and salt to taste. Mix all ingredients well, then set the sauce aside.
Place a wok on medium-high heat and add 2 tablespoons of oil. Add the aromatics: ginger, garlic, and chilies. Stir until cooked. Next, add the mushrooms and stir for a few seconds. After that, add the vegetables and sprinkle some salt. Mix to combine, then let it cook. The vegetables will produce moisture, stir fry until it dries.
Add the fresh ground black pepper into the vegetables then mix well. Next, pour the sauce that you made earlier. Let it caramelize, then add the chopped coriander leaves. Lastly, sprinkle some lime juice into your dish. Serve and enjoy!
