In a large bowl, mix the bread flour, 1/4 cup of milk, 2 and 1/8 teaspoons of unsalted butter, and a pinch of salt. Mix the ingredients using a spatula until a dough forms.
Knead the dough in the bowl for about 5 minutes then form it into a ball. Cover the dough with plastic wrap and place in the refrigerator for about 1 hour.
While the dough is in the refrigerator, peel the medium-sized potato and boil it in water. Once done, mash it well using a fork or hand potato masher. Next, add 2 tablespoons of mayonnaise and combine them well using a spatula.
Remove the dough from the refrigerator and take off the plastic. Place it in your work area and make it round and flat using a rolling pin until it becomes about 8.6 inches in diameter.
Add mozzarella cheese to the center of the flat dough and put the potato mixture on top. Flatten it using a spatula then add more mozzarella cheese. Close it by pulling the edges in the center then pinch the wrinkled area. Spread it gently with a rolling pin.
Place a pan on low heat and apply butter. Then place the dough on the frying pan. When the underside turns golden, apply melted butter on top then flip the dough. When the bottom turns golden, flip it over again then remove it from heat. Slice while hot. Then pour honey into a small bowl for dip.
