Place a pot over medium-high heat and melt 1/4 cup of salted butter. Once melted, add the shallots and onions. Saute them for 5 minutes until soft and translucent. Add 1/2 teaspoon of salt, 8 cloves of minced garlic, and 2 teaspoons of Thai red curry paste. Cook for 1 minute until fragrant.
Add all chopped carrots and 6 cups of vegetable broth into the pot. Bring it to a boil. Once boiling, reduce the heat to medium-low and let it simmer for about 20 minutes until the carrots are tender.
Once the carrots are tender, puree the soup. You can transfer it to a blender or use an immersion blender. Puree it until smooth then pour 1 cup of heavy cream. Stir it until well combined. Give it a taste and add more salt if needed. Once done, Transfer in a bowl while hot then serve. Enjoy this comforting soup any time of the day.
