Preparing the cilantro rice. Cook the rice according to the instructions on the package. Before the water starts to boil, add the bay leaves and salt. Prepare the beans and veggies while waiting for the rice to cook.
Preparing the garlic beans. Combine 1 can of black or pinto beans, 1 garlic clove, 1/2 tsp dry oregano, 1/4 tsp cumin, and a dash of chipotle pepper (optional) in a pot and heat over medium heat. Once the beans are nicely warmed up and the ingredients well combined, the garlic beans are ready.

Preparing the veggies. Cut the green and red bell pepper as well as the red onion into strips. Next, heat the oil in a skillet and add the red onion. Saute it for about 2 – 3 minutes. After 3 minutes, add the bell peppers and continue cooking on medium heat for about 5 minutes. Once the veggies started to become soft, add the seasoning (1/2 tbsp grapeseed oil, 1/4 tsp red pepper flakes (optional), 1/2 tsp salt, and 1/4 tsp pepper) and cook for a couple more minutes. By this point, your rice should also be ready. Place it in a large bowl and combine it with cilantro, lemon juice, and lime juice. Mix everything well. (Make sure to remove the bay leaves from the rice.) For the toppings, prepare some salsa, guacamole, vegan cheese, and shredded lettuce.
Assembling the burrito bowl. Place the rice at the bottom of your plate or bowl and just add the cooked ingredients and toppings as you like.
