Clean the mushrooms, remove the stem, and save them for later. Add the mushrooms to a bowl, drizzle with 1 tbsp of olive oil, and season with salt and pepper. Next, arrange them on a baking sheet or in an oven-safe skillet. After this, slice the hardened end of the stems and roughly chop them. Next, chop 1/2 cup of white onion and mince 2 tbsp of garlic. Grab some fresh rosemary, remove the leaves from the stems, and then chop. (2 tsp or so.) After this, melt 1 tbsp of butter in a skillet over medium heat. Add the chopped mushroom stems, onion, and season with a pinch of salt. Cook until the onions smell sweet and are soft. Stir in the garlic and rosemary and cook until fragrant. Transfer this to a bowl, then add 3 tbsp of breadcrumbs into the skillet. Turn the heat to medium-low and stir them around so that the breadcrumbs pick up any butter left behind and toast.

When the breadcrumbs look lightly toasted, transfer them to a bowl. Next, grate 2 oz of cheese (white cheddar, mozzarella, or swiss.) Add the cheese to the mushroom mixture and season with a pinch of salt and pepper. Divide the filling between the mushroom caps (you can use a spoon and push it down into the cavity.) Sprinkle the toasted bread crumbs on top. Place the skillet in the oven at 375 degrees F and bake it until the cheese has melted and the mushrooms have softened. Serve it with some fresh chopped parsley or chives.
