First, season both sides of the meat with 1 tsp of salt and 1/2 tsp of ground black pepper generously. Heat a large cast iron pan on medium-high heat and add 2 tbsp of avocado oil. Sear the meat for 4 to 5 minutes on each side to give it a brown crust. After searing it, transfer the meat into the slow cooker. Add the garlic and the sliced vegetables over the meat as well as a couple of sprigs of fresh thyme and a couple of sprigs of fresh rosemary. You can add two bay leaves to give it an extra flavor.

Add 2 cups of beef broth and 1 cup of red wine followed by the quartered potatoes, spreading it evenly across the top. Cover with a lid and set the slow cooker to eight hours on a low setting. When the pot roast is done, remove the rosemary, thyme, and bay leaves, then carefully transfer the chuck roast from the slow cooker and place it on a cutting board using tongs. Shred the meat using two forks. Once you’re done, transfer the meat to a serving platter and add the veggies.
