Coconuts always remind me of summer as I always get myself one whenever I’m at the beach. It is a good refreshment, especially after a swim on a hot sunny day. But did you know you can make different recipes from desserts to dishes using its meat or milk? Yes, there are many, and this is just one of them. If you love the tropical, nutty, and sweet taste of this fruit just like me, try these easy gluten-free chocolate coconut macaroons by El Mundo Eats. Preheat the oven to 350 degrees F
In a bowl, add 2 large egg whites, 1/2 cup of sugar, 1 teaspoon of vanilla extract, and a pinch of salt. Whisk all ingredients together until you get a thick mixture. To make the mixing faster, use a handheld whisk.
Add the coconut to the mixture and fold everything using a spatula.
Line your baking tray with parchment paper. Using an ice cream scoop, scoop the mixture onto the tray.
Place inside the oven at the middle rack with the fan off and bake for 15 minutes or until golden brown. Once done, remove from the oven and place on a rack to completely cool.
Melt the chocolate in a bowl. You can put it inside the microwave or use the bain marine method. Once melted, take 2-3 tablespoons and put them in a piping bag. Dip the bottom of the macaroons in the melted chocolate, then place them on a tray with parchment paper. Using the filled piping bag, drizzle some chocolate on top of the macaroons. Leave it to set and enjoy!
