Place the pecans on the sheet pan in a single layer, then place it in the oven, and let it toast for about 8 minutes at 350°F or 180°C. You can also roast the pecans in a dry skillet on top of a stove stirring constantly until they begin to brown making sure the pecans don’t burn. After toasting or roasting the pecans, roughly chop them, then arrange them in small clusters on a baking sheet lined with parchment paper.

Place a 4-quart saucepan on a stove over medium heat, then melt the butter before adding the sugar, syrup, and half and half. Bring this mixture to a gentle boil and stir frequently for about an hour or until it reaches 242°F or 117°C. Do not leave the caramel to boil unattended since the temperature can quickly rise, especially in the last few degrees. Once the caramel reaches the temperature, stir in the vanilla, then allow the caramel to cool for about 15 minutes or until it can hold a mounded shape. Working quickly, scoop a tablespoon of caramel onto the mound of pecans. Spraying the spoon with cooking spray helps prevent sticking. Allow the caramel to cool completely for about an hour while melting the chocolate and shortening in the top of a double boiler. Spoon and smooth about a teaspoon of melted chocolate onto each pecan cluster. Serve at room temperature and enjoy!
