Cut the mushroom into thick slices. Next, mince the garlic and finely chop the onion and parsley.
Add olive oil into a pan and turn the heat to low. Lightly crush 2 cloves of garlic to infuse the oil. Put the chopped onion and saute until soft. Then add 1 tablespoon of butter.
Take out the garlic cloves and add the mushrooms to the pan. Saute for 10 to 15 minutes for the mushrooms to develop flavor.
Once the mushrooms have browned, add the minced garlic. Saute until fragrant. Then add a cup of chicken or vegetable broth. Taste the sauce and season with a bit of salt and pepper. Now, add the dried oregano and parsley. Mix then let it simmer for 10 minutes or until you can taste all of the flavors in the sauce.
Add the heavy cream and mix. Then grate parmesan cheese and add to the sauce. Mix well until it becomes creamy. Then add the leftover parsley. Taste the sauce and add more salt and pepper if needed.
