There are a lot of roasted garlic potatoes recipes out there, but this one by AnitaCooks is by far the best and simplest I have made and tasted. You can fully savor all the flavors: garlic, buttery taste, and all the seasonings combined and roasted to perfection. If you are a potato lover, be sure to try this recipe. Preheat your oven to 435 degrees F.
Peel the potatoes and cut them into wedges. Put them in a bowl and add 1 teaspoon of ground black pepper, 1 teaspoon of salt, and 1 tablespoon of olive oil. Mix the seasonings and potatoes well. Then place the potatoes on a baking sheet in a single layer.
Cut off the top of 1 head of garlic and place in a piece of foil. Then drizzle some olive oil on top and rub all over. Cover them up and put the same baking sheet.
Put in the oven and roast the potatoes for 25 minutes and turn over the pieces. Roast the other side for another 20-25 minutes or until golden brown.
Open the foil packet and squeeze the garlic cloves into a bowl. Make sure to remove and of the peel that may have fallen in. Then mash the soft garlic into a paste.
In a saucepan, melt 2 tablespoons of butter. Once melted, add the mashed garlic and stir into the butter. Then add 2 tablespoons of chopped parsley and stir.
Spoon the garlic sauce over the potatoes and toss to evenly coat.
