Ingredients:

  • 1 pound dried navy beans
  • 1 pound diced bacon
  • 1 medium yellow onion diced
  • 2 bell peppers diced (red and green)
  • 2 cups ketchup
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • ¼ cup brown sugar
  • 2 tablespoons ground mustard
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions:

Step 1

Place the navy beans into a bowl or pot, then fill them with water until the beans are completely covered, and let them soak for about 12 hours or up to overnight. After soaking the beans, drain off all of the water, give them a good rinse, then transfer them to a large oven-safe pot with a matching lid. Fill the pot with water until the beans are submerged or the water is about 1 inch higher than the beans. Bring them to a boil over high heat setting, then lower it to medium-low heat, and let the beans simmer for about an hour or until the beans are tender. Once they are cooked, drain off all the water, and set them aside.

Step 2

Using the same pot, add the uncooked diced bacon and cook it for about 5 minutes before adding in the onions and bell peppers, saute them for about 5 to 7 minutes over medium-high heat or until the onions have softened. Once soft, pour in the beef broth and stir in the Worcestershire sauce and apple cider vinegar. Season them with brown sugar, ground mustard, smoked paprika, garlic powder, salt, and pepper. Then, put the boiled beans back in the pot, and stir them together until well mixed. Cover it with the lid, then pop it in a preheated oven at 300°F, and let it bake for about 3 to 3½ hours. You can also make them in your crockpot, just skip the sauteeing step, and you’re all good!
