I love preparing weeknight meals. Hence, I search for the best recipes to schedule out the meal plans. One of the dishes that stood out most is this ground beef wellington recipe by Jeni Gough on YouTube. It was simple, deliciously filling, and super easy to make and fry in my trusty Air Fryer.

Prepare all the needed ingredients and measure as per the list above.
In a skillet over low heat, cook the diced onions and sliced mushrooms in butter until they soften. Then, season with garlic, salt, and pepper. Cook the ingredients until they are no longer watery.
Once cooked, transfer to a food processor and finely chop.Then set it aside to cool.
In a mixing bowl, season the beef by combining it with salt, pepper, Worcestershire sauce, garlic powder, onion powder, and the mushroom mixture. Mix all the ingredients until well incorporated and form into 4 equal patties.
Sprinkle some flour on a counter, and slightly roll the puff pastry sheet out. Cut the pastry in half and layer a tbsp of the Boursin cheese in the center of both halves. Then, place a beef patty on each and wrap another pastry around the beef patty. When finished, transfer to a sheet pan and repeat with the second sheet of puff pastry and beef patties.
Beat an egg and brush it on the wellingtons. Next, pierce the top of each wellington four times to create vents using the tip of a knife.
Place the wellingtons in the air fryer to bake for 36 minutes at 350F or 45–50 minutes in the oven at 375F.
Serve with horseradish sauce, Dijon mustard, beef gravy, or with any of your favorite sauces.
