Sweets are imminent for Valentine’s Day. It’s like the perfect topping for these 20-minute cheesecake bites by Chaz’s Lifestyle on YouTube. A quick, simple, and deliciously sweet treat that you can serve on your most awaited dinner date.

Ingredients:

Cookie Crust

  • 1 cup, Goya Palmeritas (use your favorite cookie) 
  • 2 1/2 Tbsps unsalted buttercream, melted

Cheesecake Batter

  • 16 oz cream cheese, softened
  • 7 Oz heavy cream
  • 1/2 cup, powdered sugar 
  • 1 Tsp vanilla extract

Cherry glaze

  • 16 oz signature brand: cherries
  • 1 cup, granulated sugar

Directions:

Prepare all the needed ingredients.

Preheat the oven to 350F.

Blend 1 cup of Goya Palmeritas or any preferred cookies in a food processor.

In a mixing bowl, combine the finely crushed Goya Palmeritas with 2 ½ tbsp of melted unsalted buttercream. Mix thoroughly until clumpy. Line cupcake liners in a cupcake pan and add ½ to 2 tbsp of the cookie mixture to each cupcake liner.  Smash the cookie mixture flat in the cupcake liner with a small cup. Place them in the oven to bake for 6-7 minutes at 350F.

In a bowl, add 16 oz of softened cream cheese, 7 oz of chilled heavy cream, 1 tbsp of vanilla extract, and ½ cup of powdered sugar. Using a hand mixer, mix well until everything is fully incorporated and fluffy.

Once the cookies are cooled, add about 1-2 tbsp of the cheesecake batter. Slightly shake the tray to even out the batter.  Place them in the fridge to chill for about 20 minutes.

For the cherry glaze topping, heat 16 oz of signature brand cherries in a preheated pan. Make sure to remove the stems. Once the cherries lightly boil, add 1 cup of granulated sugar, and stir to a boil. Once the cherry topping is done, let it cool on the stove. Carefully remove the cheesecake bites from the cupcake liners.

Lastly, pour in some of the cherry glaze topping and more of your favorite toppings. Some whipped cream or fruit of your choice.
