Let me tell you, I grew up with DC Cookies, and when I saw this tutorial on TLC while I was searching for Valentine’s treats, I raved. These strawberry shortbread cookie treats are a must for Valentine’s Day. No doubt, insight. These heart cookie treats will be the perfect Valentine’s Day goods to give to your loved ones or enjoy with a cup of coffee!

Ingredients:

  • 4 sticks unsalted butter
  • 2 cups confectioner’s sugar
  • ½ cup orange juice
  • 1 tsp baking powder.
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 3 cups strawberry preserves
  • 6 cups all-purpose flour 

Directions:

Prepare all the needed ingredients.

Preheat the oven to 350F.

In a mixing bowl, mix in the 4 sticks of unsalted butter and 2 cups of confectioner’s sugar, pouring 1 cup at a time. Combine until thick and creamy inconsistency.

Separate the 2 egg yolks from the egg whites.  Turn the mixer down to low speed and add the 2 egg yolks, 1 tsp vanilla extract, and ½ cup orange juice. Mix until well combined.

In a separate bowl, mix 6 cups of all-purpose flour with 1 tsp of baking powder. Gradually add the flour mixture into the butter mixture while whisking continuously. Make sure to scrape all the sides to mix everything evenly.

Sprinkle flour over the parchment paper and knead the dough into a circle.  Cut the dough into two parts. One part is for the top of the cookies and the other for the bottom. Pinch off small parts of the dough and roll them flat.

Then, cut cookie shapes with different cookie cutters. Make sure to use some hearts for Valentine’s Day!

Place the cut-out dough on a lined cookie sheet. For the top part of the dough, cut with the same cookie cutter and press a smaller heart into its center. Place the cookie trays in the oven to bake for 8–10 minutes at 350F.

Mix up 3 cups of strawberry preserves and scrape some on the bottom of the cookies using a thin spatula. Then, line up with the top part of the cookie.  Repeat with all of the cookie pairs and serve!
