Today’s recipe features another classic and all-time favorite ingredient! If you are here then you must’ve read the title and that would also mean that you love eating black-eyed peas. Get ready because this recipe is another gem created by Smokin’ & Grillin’ wit AB via YouTube. One of many things that I love in his tutorials is that his method always works best than other slow cooker/crockpot meals, it doesn’t turn out overcooked or undercooked, he’s very genuine in sharing his technique that you can get the same result as his almost every single time. So, if you want to add this to your crockpot meals list then go on ahead and proceed to the procedures down below.
Step 1
Cut and dice the green bell pepper, then dice, roughly cut, or finely chop the yellow onion, and mince the garlic cloves. Get your crockpot ready and place a crockpot liner inside. Throw in the green bell pepper, onion, garlic, ham hock, beans (soaked for at least 4 hours), and chicken broth. Make sure that the ham hock and beans are completely submerged in the broth.

Step 2
Cook it on high for 4 hours with its lid on, then when it’s done, give it a good stir. Take and drain about a cup of beans, then mash them completely, put it back in the crockpot, and mix. Once the soup has thickened, add the sliced smoked sausage, chopped ham, black pepper, and salt, then close the lid. Cook it on high for an additional hour. Turn of the cooker, sprinkle chopped parsley, stir, and serve.
