Preppy Kitchen has created a recipe for the most delicious Lofthouse copycat cookies! And they really do taste exactly like the real thing. You can even make the icing in any color you’d like.

In a large bowl mix up flour, cornstarch and salt. Once you’ve got this all mixed up, set it aside to use later.
In a stand mixer, add butter and mix. As the butter is mixing, add in some granulated sugar. You just want the butter to reach a softened consistency.
Crack one egg into the bowl with almond extract and sour cream. Mix this up to a pudding-like consistency.
Mix in your flour mixture into the bowl with your liquid batter. Once the mixture is all combined, you should have thick cookie dough.
Place the cookie dough into the middle of two pieces of wax paper. Use a rolling pin to flatten out the dough.
Use a cookie cutter to cut the dough into circle shapes, then place them onto a prepared cookie sheet.
Place the cookies into the oven at 375 degrees until they are golden brown.
Make your icing in a stand mixer. Start by adding in butter and then pouring powdered sugar into the butter. While the butter and sugar are mixing, add in about two tablespoons of cream or milk and one teaspoon of vanilla. Once you have a thick buttercream, add in your food coloring.
Finally, you can pipe that icing onto your cookies and top with sprinkles.
