This 8-ingredient potato au gratin recipe by Kellie Hemmerly – The Suburban Soapbox will never disappoint. I love this dish so much because it’s super easy to make and tasty! Whenever my family comes over to my house, I make sure to cook this for them, along with roasted beef. You can also serve it with chicken, cornbread, or roasted vegetables. Ingredients:

  • 3 oz of butter
  • 1 garlic clove (minced)
  • 4 tablespoons of cornstarch
  • 1 teaspoon of kosher salt
  • 1/2 teaspoon of fresh ground pepper
  • 2 cups of low-fat milk
  • 2 cups of shredded white cheddar
  • 5 cups of thinly sliced Yukon gold potatoes

Instructions:

Step 1:

Get a large saucepan and place over low heat. Add 3 oz of butter and let it melt. Once melted, add minced garlic and saute for about a minute.

Step 2:

Add 4 tablespoons of cornstarch, 1 teaspoon of salt, and 1/2 teaspoon of fresh ground pepper to the pan and whisk until smooth.

Step 3:

Gradually add 2 cups of low-fat milk and bring it to a boil. Stir constantly until the sauce thickens for about 2 to 3 minutes. Once done, remove it from the heat.

Step 4:

Add 1 1/2 cups of cheese and mix until melted. Next, add the thinly sliced Yukon golden potatoes and stir until everything is well-coated.

Step 5:

Transfer the mixture to a baking dish greased with cooking spray. Sprinkle the remaining cheese on top. Cover the baking dish and bake for 30 minutes. After that, uncover the dish and bake for 30 to 45 minutes more or until the potatoes are tender and the sauce is golden brown and bubbling.

Step 6:

Once done, remove it from the oven and allow it to cool for about 5 to 10 minutes. Sprinkle finely chopped parsley on top before serving. Enjoy it with your favorite meat or vegetables!
