This no-bake classic coconut ice will surely bring a lot of good memories. It’s a recipe by Platin’ It With Wendy, an old-fashioned treat that is well-loved by a lot of people. The freshness of the coconut combined with the milk is absolutely irresistible. I made some at home last weekend, and everyone enjoyed it. You won’t stop eating it after you have the first bite. Grease an 8″ by 8″ cake pan with margarine then line it with parchment paper. Set it aside for later.
Add 1 can of condensed milk, 1 teaspoon of vanilla extract, and a pinch of salt in a mixing bowl. Next, sift 6.35 oz icing sugar directly into the bowl. Mix until well combined using a silicone spatula.
Add 4 and 1/4 cups of desiccated coconut to the mixture and mix until it’s well incorporated. Let it absorb the milk and sugar. Use your clean hands to mix it.
Divide the two parts into equal sizes and add a drop of pink food coloring to one of the portions. Mix until it turns the mixture turns pink.
Add the white layer first in the prepared pan and flatten it into an even layer. Next, add the pink layer and flatten it the same way as the first layer. You can use an angled spatula to make your work easier.
Cover the mold with aluminum foil and refrigerate it for at least 1 hour to let it set.
After an hour, remove the coconut ice from the mold and cut it into bite-sized pieces. Serve and enjoy it with friends and family!
