Place the chopped strawberries in a bowl and add 1 tablespoon of sugar. Mix well and set aside.
Place the graham crackers or digestive biscuits in a ziplock bag and crush them using a rolling pin until it forms into a fine crumb. You can also use a food processor to crush them. Transfer them into a bowl. Next, add 2 tablespoons of melted unsalted butter. Mix well until crumbs are moistened.
Divide the crumbs evenly between individual serving cups, then press to form a crust layer.
Add 4 oz of cream cheese, 1/4 cup of sugar, and 1/2 teaspoon of vanilla extract in a bowl. Beat using a hand mixer until combined and smooth.
In a different bowl, add 1/2 cup of heavy whipping cream. Beat until stiff peaks. Add the cream cheese mixture to the whipped cream. Fold until combined, then transfer to a piping bag.
Add chopped strawberries to the cups, followed by cream cheese. Next, add more strawberries then sprinkle crumbs on top. Lastly, add a half slice of strawberry. Serve and enjoy!
