Can things get easier? At this point, so many recipes have become simplified due to the lockdown. I am not complaining, because if I can make a chocolate cake in the most simple way possible, then why not? Huma in the kitchen‘s video is not in English, but she has subtitles on what ingredients she is using. There’s really no need to know what she says, just follow along with the video and you’re good to go. Everyone in the comments seemed to have done the same without a problem so, there’s some reassurance. I love how it’s eggless and a butterless cake too. This is a great lockdown recipe when you are limited to certain ingredients that are also affordable.

Ingredients:

Cake:

  • 1 cup flour
  • 6 tbsp cocoa powder
  • 2 tsp baking powder
  • 1/2 baking soda
  • 3/4 cup sugar
  • 1/2 cup milk
  • 6 tbsp oil
  • 3/4 cup hot water

Icing:

  • 3/4 cup heavy cream
  • 2-4 tbsp icing sugar

Chocolate Ganache:

  • 1/4 cup whip cream, hot
  • 7 tbsp semi-sweet chocolate chips

Directions:

First, you want to mix your cake ingredients together and pour it in a microwaveable safe pan. If you wanted to bake this cake, you can at 350F for 20-25 minutes. In this tutorial, you should just microwave the cake for 5-6 minutes with 2-minute intervals. This also varies depending on the power of your microwave.

Next, once your cake is finished and chilled completely. Make your homemade whipped icing and chocolate ganache. You’ll leave the cake in the fridge for 1-2 hours and then it’s ready to serve.

Overall, this cake looks so good and I think the ganache topped everything off for me. The cake looks super moist even when it’s cooked in the microwave. I am impressed and can’t wait to test this recipe out.
