Bread pudding has been a staple in my home, and this recipe from Breakfast For One on Youtube is my absolute favorite. It’s super easy to make with simple ingredients and tastes fantastic. You can also top it with any fruit of your choice or leave it at is. I’m sure your family will going to love this, just like mine.

Ingredients:

  • 1 thick slice of brioche bread (or 2 slices of regular sandwich bread)
  • 1/3 cup of plain Greek yogurt
  • 1 egg
  • 1 tbsp unsalted butter, melted
  • 1 tbsp sugar
  • 1/4 tsp vanilla extract
  • a pinch of salt
  • blueberries for topping (optional)

Directions:

Step 1

Tear the bread into bite-size pieces and spread in a single layer on a baking dish. Next, beat one egg until smooth, then add 1 tbsp sugar, 1/4 tsp vanilla extract, a pinch of salt, and 1/3 cup of plain Greek yogurt. Mix until blended and smooth. Melt 1 tbsp unsalted butter in the microwave and stir it into the egg mixture.

Step 2

Pour the egg mixture over the bread evenly. Gently press down the bread into the mixture so that all the pieces are coated. Top it with some blueberries or any fruit of your choice. (This is optional.) Preheat the toaster oven to 375 degrees F while the bread is soaking up the custard. Bake it for between 18 to 20 minutes. (Adjust the cooking time depending on how custardy you want the texture to be.)
