These cornflake cookies remind me so much of my childhood, as I grew up eating these treats at home. I loved them so much as a kid but have forgotten about them for quite a while since I moved to a different place. Luckily, I found this recipe by Easy Peasy Pan on Youtube. I didn’t know it was this easy to make! I will definitely make these again and again.

In a large bowl, add 1/2 cup of butter, and 6 1/3 tablespoons of sugar. Whisk them together until light and fluffy.
Add one egg and mix until well incorporated.
Gradually add the flour to the mixture, and fold after every addition.
Add the cornflakes and combine everything well.
Prepare the baking sheet by lining it with parchment paper. Spoon the batter and form a round shape. You can also use a small ice cream scoop for this. You don’t need to roll it into a ball, just form it into a cookie. Place in the parchment paper and repeat with the remaining batter. Make sure to space them about an inch apart as they will expand later on.
Place the baking sheet with the cookies inside the oven and bake at 347 degrees Fahrenheit (175 degrees Celsius) for about 15 to 20 minutes until golden brown. The time depends on how big the cookies are.
Once the cookies are done baking, remove them from the oven and place them on the cooling rack. Let them cool for a while then serve. Enjoy!
