A strawberry sorbet is the perfect treat on a hot sunny day. This has always been a tradition in our home every summer, and the kids always remind me to make this recipe from Laura in the Kitchen. It’s so satisfying and refreshing – everyone will surely love this simple cold dessert. Make it at home with only 4 ingredients: strawberries, water, lemon, and sugar.

Prepare the strawberries by rinsing them and removing dirt. Once done, trim the top and cut them in half. Place them in a bowl.
Get a small saucepan. Add 1/2 cup of granulated sugar and 1 cup of water. Stir and cook on medium heat until the sugar melts. Once melted, set it aside and allow it to cool slightly.
Work in batches. In a blender or food processor, add half of the sliced strawberries, half of the sugar syrup, and some of the lemon juice. Puree until it becomes smooth. Transfer to a container and repeat with the remaining ingredients. You can strain it if you want to remove the seeds, but if you are using a powerful blender you don’t need to.
Pour the mixture into a container with a lid and place it in the fridge overnight. Make sure the insert to the ice cream machine is in the freezer for about 24 hours. It needs to be frozen solid otherwise your sorbet will never freeze.
Transfer the mixture to your ice cream machine. Cover it with the lid and let it do its magic for about 25 minutes or more depending on your machine.
