Get two bowls and separate the yolks from the whites. Set the egg white aside, as you don’t need it for this recipe. You can make it into a meringue buttercream.
Zest the lemons. You need about 2 tablespoons of lemon zest. After that, juice the lemons until you have a half cup of lemon juice. Make sure not to add the seeds.
Strain all egg yolks into a pot and lightly beat with a whisk. Continue whisking while adding the sugar until it turns lighter in color. Next, gradually stir in lemon juice.
Place the pot over low heat. Stir constantly with a wire whisk until the mixture thickens and starts to bubble. It should coat the back of a wooden spoon.
Remove the pot from heat, then add the cold cubed butter. Mix until melted.
This step is optional. If you want your curd to be silky smooth, strain the final mixture to remove any bits of zest.
Transfer the lemon curd to a sealable container. Serve it with crepes, bread, or pancakes.
