In a saucepan, add 1/2 cup of butter, 14 oz of condensed milk, 1 3/4 cup of light brown sugar, and 1 tablespoon of golden syrup.
Place the saucepan over low heat, then stir everything together until the sugar dissolves and the butter melts. Bring the mixture to a gentle simmer, then continuously stir while remaining over low heat for 15 minutes.
After the 15 minutes, check if the fudge is ready. Get a jug of cold water and a teaspoon. Take a small amount of the fudge. Drop it into the cold water, then take it with your fingers. If you’re able to form a ball with the fudge when you rub it between your fingers, then it’s ready. Otherwise, cook for a few more minutes on the stove until you achieve the right consistency.
Transfer the mixture to a large mixing bowl. Using a wooden spoon, electric hand whisk, or a food mixer, beat for 3 to 5 minutes until the fudge has just started to set.
Transfer to a baking dish that’s lined with a greaseproof or parchment paper on the bottom. Spread it evenly and flat, but make sure to work quickly because the longer you leave it, the colder it will get and harder it will be to spread. Place in the fridge for at least an hour to allow it to firm up nicely.
After an hour, take it out from the fridge and cut it into 25 equal square pieces. Store in the fridge until ready to be eaten.
