This cookie dough bread recipe by Bethany Ugarte is recreated by emmymadeinjapan on YouTube. It’s crazy that this recipe doesn’t require sugar or flour. It’s keto-friendly, gluten-free, and sugar-free. It’s a flourless bread for those that have allergies. Also, it’s one of those healthy bread that is so simple to make. I love recipes that have minimal ingredients because it amazes me every time how it would turn out in the end. Plus, with these 4 ingredients, you’re able to get a full loaf of bread. I think these types of recipes are good alternatives for those that do not have a lot of baking ingredients at home. I’ve never made a recipe that didn’t include eggs and baking soda as a base so, it would be nice to see the end results at home for myself. Also, I think one thing I would change for this recipe is adding sugar. I love sweets, and this bread looks a bit dry. Also, I think I would add more chocolate chips too because I love chocolate.
First, whisk the eggs and baking soda together until peaks form. Then, add the cashew butter and continue mixing.
Next, pour the cookie dough bread batter into the lined bread pan and add the chocolate chips in between and on top. Bake for about 25 minutes at 350F.
In conclusion, this looks like a perfect wholesome bread. Also, be aware that this isn’t going to be a typical sweet bread because there are no sugars added. It would be an interesting bread to try out and make especially because it’s a quick recipe. I’ve made many recipes like this before, and it’s good to know that it’s healthy. However, I wonder what cookie dough bread would taste like. The chocolate chips look amazing on this bread.
