Get an iron skillet and add 4 tablespoons of butter, let it melt. Once melted, add the chopped onions and cook for 3 to 4 minutes or until softened and light gold. Next, add the minced garlic cloves and saute for a minute or until fragrant.
Put 4 tablespoons of all-purpose flour into the pan. Mix well with the onions and garlic. After that, pour 2 cups of low-sodium chicken or vegetable stock gradually, stirring after every addition.
Season the soup with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/4 teaspoon of paprika. Stir the mixture. Next, add 1 cup of grated carrot and 3 cups of cut broccoli. Mix the ingredients well and let it simmer for about 15 minutes.
Next, add 2 cups of half and half or any substitute. Mix it well. Next, add grated cheddar cheese and let it simmer for another minute. Taste and adjust the seasoning if needed.
