Am I the only one who loves simple, undecorated cakes? I especially love sponge cakes as they are delicious despite their plain looks. This recipe from Savor Easy on Youtube is one of my favorites. It’s super jiggly and fluffy and only needs three ingredients to make; can you believe that? I bet all the ingredients are already in your kitchen. Ingredients:

  • 5 large eggs (or 4 extra large eggs)
  • 1 cup of sugar
  • 1 cup of all-purpose flour

Directions:

Step 1

To a large mixing bowl, add five cracked eggs, and whip it on low for one minute. To this, add the sugar in two batches and continue to whip the mixture until light and fluffy (about eight minutes). After this, add 1 cup of all-purpose flour and fold it gently.

Step 2

When the flour has been fully incorporated, switch to a whisk and continue to fold. Scrape the sides and the bottom, then gently pour the mixture onto a parchment paper-lined baking pan to eliminate bubbles. Place the pan in a baking tray and pour warm water on the bigger pan. Bake at a 325 degrees F oven for 60 to 70 minutes. After baking, remove the parchment paper while the cake is still hot. Slice the cake and serve. Enjoy!
