Need a quick and easy dessert recipe? Here’s a 3-ingredient no-bake milk cake by Quick Simple & Delicious. It’s the perfect pair for your cup of tea or coffee. This is also a great last-minute treat if you have guests coming over to your house. Prepare it in less than an hour then place inside the refrigerator while you do some other things. Get a big bowl and pour 2 and 1/2 cups of condensed milk. Set it aside.
Slice your lemons into half and squeeze them until you have 3/4 cup of lemon juice. Strain it to remove the pulp and seeds then add to your condensed milk.
Whisk the mixture until it has a thick consistency for about 1 minute using a hand mixer or stand mixer. Once done, scrape the mixture on the sides and fold for a few times. Cover with plastic wrap and place inside the refrigerator. Let it chill for about 5 minutes.
Line a 11.8″ by 5.9″ mold with a cling wrap. Get the milk mixture from the refrigerator. Place the piping bag inside a glass and scoop the mixture inside. Squeeze some lemon cream mixture into the bottom of the mold.
Place the cinnamon cookies on the bottom of the pan. Cut some in half to fill the small spots. Once done, put another layer of the lemon cream mixture. Use a spoon to spread them evenly. Continue the same process for the remaining mixture and cinnamon cookies. Cover the mold with cling wrap and place it in the refrigerator. Let it chill for about 3 to 4 hours.
After 3 hours, remove from the fridge and take off the plastic wrap. Transfer into a plate. Put the remaining cookies into a food processor and add 1 to 2 teaspoons of cinnamon (optional). Grind until it becomes a fine powder. Sprinkle on top of your milk cake. Slice then serve. Enjoy!
