Preheat your oven to 350 degrees F or 180 degrees C. Next, line a baking tray with parchment paper then set it aside.
In a large bowl, put 1 cup of softened butter. Next, sift the powdered sugar into the bowl to remove some lumps. Beat them well until light and fluffy using a hand mixer or stand mixer.
Add the flour in two batches. Mix until combined. Add 2 to 3 tablespoons of flour if the dough is too soft.
Shape the cookies. There are 2 ways to do this: (1) Shape the dough into a disk form then wrap it in plastic wrap. Place in the refrigerator and refrigerate for 1 hour. After 1 hour, remove it from the fridge and roll out the dough into 1/4-inch thick. Next, cut it into your desired shape. It could be round, heart or rectangle. (2) Make the dough into a log shape, wrap it using plastic wrap and freeze for about 30 minutes. After 30 minutes, unwrap the dough and slice it into 1/4 inch thick slices.
Place the cookies on the baking tray and put them inside the oven. Bake for about 12 to 15 minutes or until slightly golden.
Once done baking, let it cool. You can coat it with sugar if you desire. Serve and enjoy!
