Ingredients:

  • 2 tbsp butter, divided
  • 2 tbsp yellow onion, diced
  • 2 tbsp green bell pepper, diced
  • 1/4 cup cooked ham, diced
  • 3 large eggs
  • 1 tbsp milk
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 1/8 tsp smoked paprika
  • 2 – 3 tbsp shredded cheese

Directions:

Step 1

To start, prep and chop the ingredients accordingly and set them aside. Next, heat a medium skillet over medium heat and add 1 tbsp butter. Once melted, add the diced onion and bell pepper and saute until softened. After this, add the ham and cook until heated through. Turn off the heat and transfer them to a bowl.

Step 2

Next, crack three eggs in a bowl and add 1 tbsp milk, then season with 1/8 tsp salt, 1/8 tsp ground black pepper, 1/8 tsp onion powder, 1/8 tsp garlic powder, and 1/8 tsp smoked paprika. Whisk until well blended.

Step 3

Now, heat the same pan and add another tablespoon of butter. Once melted, add the eggs and let them set along the outside, then start pushing things to the inside. After this, take your spatula, go underneath, and flip the whole thing over. Turn off the burner and add the cooked, peppers, onion, and ham across the center. Put some cheese over, then take the sides of the eggs and bring them to the center. Put some more cheese on top, then place the lid on, and heat it until the cheese melts.
