My mornings are not complete without peanut butter and jam; that is why I started learning how to make homemade jam as I transitioned to a healthier diet. While looking for a recipe, I found this homemade pineapple jam from The Terrace Kitchen on Youtube. This recipe only needs two ingredients – can you believe that? I wish I’d known earlier it’s easy to make homemade jams. It’s really satisfying making my own jam, knowing that it’s healthy and doesn’t includes artificial flavors. I shared this recipe with my friends, and they also started making their own. What I like about this recipe is that it’s inexpensive to make and it’s so delicious. Transfer your chopped pineapple to a blender or food processor and puree it. After this, strain the pineapple puree and discard the pulp. Add a little water to the pineapple and strain it again to make sure the consistency is smooth. Once you have a smooth and thick consistency, transfer it to a large pan and add 2 cups of sugar. Turn the heat to medium-high and stir the pineapple consistently. Discard the froth on top once it starts to build up.

Continue to cook while stirring for twenty-five to thirty minutes or until it thickens. (You know the pineapple’s ready once the consistency starts to thicken and become translucent.) Once the jam is holding its shape and not runny anymore, turn off the heat and let it cool down. Transfer it to a glass jar. (This will remain good for up to three months when stored in the refrigerator.)
