This 2-ingredient no-bake breakfast cake by One day One recipe is always my go-to snack in the morning. It has this crispy texture and roasted and chocolatey flavor that is so addicting. I didn’t know you could make a yummy treat with just these ingredients. Read on or watch the video below for full instructions.

Ingredients:

  • 1 cup of dehydrated coconut
  • 3.5 oz of dark chocolate (70% minimum)

Note: you can replace the coconut with ground almonds or peanut

Instructions:

Step 1:

This step is optional. Add the dehydrated coconut into a large pan and place over low heat. Roast the coconut until it turns brown. Make sure to keep on mixing to avoid burning. You don’t have to roast the coconut but it makes a big difference to the overall taste. This process brings the sweetness that replaces the sugar. Once done, transfer to a bowl.

Step 2:

Cut the dark chocolate into small pieces and place into a heatproof bowl. Place it in a pot filled with water. Make sure the bottom of the bowl doesn’t touch the water. Place the pot over heat and add a few drops of water to get perfectly melted chocolate. Keep on stirring the chocolate until fully melted. Once it’s smooth, turn off the heat.

Step 3:

Transfer the melted chocolate to the roasted coconut. Mix until well combined.

Step 4:

Place a parchment paper into a baking pan. Get a cookie cutter and use it to form the cakes. Take about 2 to 3 tablespoons (depending on the size of your cookie cutter or how thick you want your cake to be) of the mixture and press it to the bottom. Repeat with the remaining mixture. Let the cakes set for about 30 minutes. After that, remove them from the parchment paper and place them on a plate. Serve and enjoy!
