Start by separating the egg whites from the yolks in two different bowls.
In a mixing bowl, add 3 tablespoons of cottage cheese and 3 egg yolks. Whisk until well combined.
Get the egg whites and add 1/8 teaspoon of salt. Whisk until foamy.
Add the egg white mixture in 3 batches to the cottage cheese mixture. Gently fold after every addition. Make sure not to overmix it. Do not stir it vigorously as it will deflate the egg whites and make the batter dense and heavy.
Transfer the mixture to a loaf pan and spread evenly. Place inside the oven and bake for 25 to 30 minutes or until golden and springy.
