Ingredients:

  • 14 oz (400g) raw almonds
  • 3 oz (85g) maple syrup
  • salt (optional)

Directions:

Step 1

Place the almonds on a baking tray and roast them in a preheated oven at 400 degrees F for eight to ten minutes. After roasting, let the almonds cool down until warm, then place the warm almonds in a food processor. (You can add 3/4 tsp salt at this point but this is optional.) Blitz the almonds on high speed. (We are looking for smooth consistency, the whole process would take eight to ten minutes.) After you achieved the smooth consistency, transfer it to a bowl, then add 3 oz maple syrup. Mix well until combined.

Step 2

Divide the dough into 16 equal portions of 1 oz each. Press and roll each portion into a ball, then press with the tips of your fingers to flatten the cookies. Place the almond cookies in a lined baking tray, then bake them in a preheated oven at 400 degrees F for 12 to 15 minutes. After baking, let them cool completely before serving.
