Note: Make sure your eggs are at room temperature
In a saucepan (heat turned off), mix cornmeal, flour, and salt. Mix until well combined.
Stir in broth and milk. Turn on the heat. Cook and let it come to a simmer while stirring occasionally. Once bubbling, stir for 2 minutes or until thick and bubbly. Remove from heat.
Stir 2 tablespoons of butter and stir until melted and well incorporated.
Add beaten egg yolks and shredded chicken, to your cornmeal mixture. Next, fold in the beaten egg whites. Transfer to a shallow greased casserole. Spread the top evenly.
Bake it in a 325F oven for about 1 hour. Serve and enjoy!
