Whenever I’m hungry and craving a savory dish, I make Aaron and Claire‘s 15-minute chicken fried rice recipe. You can never go wrong with this simple dish! It is packed with all the delicious umami and savory flavors. It is probably even better than the ones in Chinese restaurants near you. If you are a fan of Chinese takeout, you have to give this recipe a try.

This is the best dish you can make with leftover rice. It has chicken, eggs, carrots, peas, and green onions. The secret to making the best fried rice is the sauce. It is a mixture of soy sauce, mirin, chicken bouillon, and white pepper. Make sure not to skip it. If you don’t have mirin at home, use any cooking wine you have or water. If you don’t have white pepper, you can use black pepper.

Note: you can substitute mirin with other cooking wine or water
Cut the chicken into bite-sized pieces.
In a large bowl, add the chicken pieces and all the marinade ingredients. Mix until well incorporated.
In a different bowl, add 3 eggs and a pinch of salt. Beat well.
Blanch the carrots and peas in your stove top. You can also put them in a microwave-safe bowl, add a little bit of water, then microwave.
Place a wok or pan over your stove and add 2 tablespoons of oil. Heat over high heat. Once hot, pour the eggs and cook for 30 seconds. Once it’s 70% cooked, remove from the wok or pan and set aside.
Add 2 tablespoons of oil in the same wok and heat over high heat. Once hot, add the chicken pieces and cook for 2 minutes or until nicely browned.
Add the garlic and white parts of the green onions. Cook until fragrant.
Add 4 cups of cooked rice and stir for a minute or two. You can use a ladle to smash it down.
Pour the sauce around the edges and give it about 20 or 30 seconds to caramelize. Mix it well.
Add the carrots and peas. Stir fry for 2 minutes. You can add 1 tablespoon of water if the rice is still clumped.
Add the cooked eggs and break into little pieces. Toss together for a minute or two. Give it a quick taste and adjust seasonings if needed. Turn the heat off and add the green onions, toasted sesame seeds, and toasted sesame oil. Give it a final mix and serve.
