Dice the sweet pepper into small pieces, then chop the green onions. For the sausage slice it in half, make long strip,s then dice. Place them in different small bowls or a plate.
If you are using a white bread loaf, cut 5 thick slices. Next, get one slice of bread, cut a square in the middle, then remove it. Do the same for the other slices.
Place a pan over medium heat, then pour some oil. Add 6 tablespoons of peas, 6 tablespoons of corn, chopped green onions, diced pepper, and sausage. Mix all ingredients together. Season the vegetables with 1/2 teaspoon of salt, then let them cook for a few minutes. Once done, remove from the pan and transfer into a bowl.
Add 2 pieces of eggs to the vegetable mixture. Stir well to beat the eggs.
In the same pan but cleaned, brush some oil in the middle, then add place the crust of the bread. Fill half of the bread with the vegetable mixture, then place 1 piece of mozzarella cheese on top. Cover it with the middle sliced bread. Press using a spatula to flatten. Let it cook until browned, then flip to the other side. Press again to flatten. Do the same process for the remaining bread slices.
