Love eating pickles? Here are three easy 1-2-3 pickle recipes by Dabble in Dishes that you can try at home. You can choose from carrots, cucumber, and onions, or you can make them all in one go. They are perfectly seasoned and have the perfect crunch!

Ingredients:

  • 2 lbs of cucumbers (you can use any cucumber for this just make sure that you get some with as few seeds as possible)
  • 1/4 cup of salt
  • carrots
  • 3 mediums sized onions
  • bunch of dills
  • 1 chili pepper
  • 6 cloves of garlic
  • peppercorns

For each 1 liter jar:

  • 1 cup of 12% vinegar
  • 2 cups of sugar
  • 3 cups of water

 

Instructions:

Step 1:

Thoroughly wash the cucumbers. Once done, slice them into pieces and place them in a strainer. Don’t cut them very thin.

Step 2:

Add 1/4 cup of salt to the cucumber and toss it well. Make sure the salt is evenly distributed. Let it sit for about 30 minutes in the kitchen sink or over a bowl. The salt will start to draw moisture from the cucumbers.

Step 3:

Peel the carrots and cut them into small pieces. You can make them into long thin bars or thick slices. Cut the bottom end of the onion. Make sure to remove any ugly or damaged areas. Cut right in the middle, then across to get long strips.

Step 4:

After 30 minutes, rinse the cucumber under cold water and wash away all the salt. Do this for a few minutes to make sure you get all the salt off the cucumbers.

Step 5:

Make the pickle juice. In a medium size pot, add 1 cup of vinegar, 2 cups of sugar, and 3 cups of water. Since we’ll be making three jars, triple the amount of each ingredient. You’ll use 3 cups of vinegar, 6 cups of sugar, and 9 cups of water. Place over heat and stir until the sugar is dissolved.

Step 6:

Chop the chili pepper (optional) and dill. Peel the skin from the cloves of garlic.

Step 7:

Prepare the jars. Make sure they are clean. Add 2 cloves of garlic to each jar, chili, peppercorns, and dill to each jar. Next, stuff the vegetables to about one-third of the jar, then add more herbs and spices, before adding more. Press down the vegetables to make them fit. Try to get rid of unnecessary air pockets, especially for the onions. Add more herbs and spices on top.

Step 8:

If you want to make sure the jars don’t crack, you can place them in a warm water bath. Pour the boiling pickle juice into each of the jars. Let them cool down on the counter for a few hours before storing them in the fridge. Wait for 1 day before consuming them.
